• Walks all F&B front and back of the house areas on daily basis
and update Director of Food and Beverage on any irregularities;
• Ensures consistency of quality, taste, presentation, temperature of
beverage served in all restaurants and bars (according to the company
standard);
• Ensures maximum creativity in all wines, cocktails and mocktails presentation;
• Ensures that FSMS Program is strictly implemented, including the
cleanliness of all restaurants and bars, personal hygiene standards for
all food handlers including kitchen and stewarding department;
• Shares information from divisions with F&B team to create day to day operational awareness.
• Assists to develop, modify, and maintain the F&B Operation Policy & Procedure Manual;
• Reviews F&B performance and provides recommendation to improve the F&B Operations and overall profitability;
• Maintains high standards of personal and staff appearance and
grooming, which include wearing the proper uniform and name tag when
working (per brand standards);
• Maintains a professional working relationship and promote open
lines of communication with managers, employees and other departments;
• Maintains an organized and comprehensive filing system with
documentation of purchases, vouchering, schedules, forecasts, reports of
relevant data from current and previous years; obtain all information
available for upcoming year (occupancy, forecast, trends, reservations,
festive periods, etc.) and tracking logs;
• Reacts to negative trends in market place by implementing food and beverage promotions;
• Ensures staff compliance at all times with NagaWorld’s standards
and regulations to encourage safe and efficient F&B operations.
