• Produce high-quality sushi, sashimi, and seafood dishes to fulfill customers’ orders with consistent taste, presentation, and temperature.
• Lead and manage the sushi section’s daily operations, optimizing cost, efficiency, and workflow within budgeted targets.
• Establish and monitor sushi quality goals and implement standard operating procedures to maintain brand standards.
• Collaborate with the Executive Chef and restaurant manager to design seasonal menus and promotions.
• Maintain HACCP standards for dry and cold storage, ensure cleanliness and organization of sushi stations.
• Monitor consumption, inventory, and equipment usage to maximize capacity and minimize waste.
• Train, mentor, and evaluate sushi line cooks and apprentices; schedule and allocate work assignments.
• Oversee knife skills, portioning, rice preparation, fish handling, and sanitation practices.
• Ensure cross-functional coordination with service staff, beverage/program teams, and procurement.
• Enforce safety and hygiene practices and manage risk in the sushi area.
• Monitor guest feedback and drive continuous improvement in quality and service.

Competencies and Requirements

• Experience: Minimum 8 years of culinary experience in luxury 5-star environments, with a proven track record in high-end dining; prior experience in Asia is preferred.
• Knowledge/Certificates: Expert mastery of Japanese cuisine and ingredients; relevant culinary certifications or Japanese cuisine trainings a plus.
• Education: Secondary school diploma or equivalent; culinary degree or diploma preferred.
• Language Abilities: Native in Japanese; English proficiency preferred. Additional languages a plus.

• Computer Skills: Basic computer skills (order systems, inventory, MS Office/Google Workspace)
